Zucchini is Coming

Pretty sure this was the last snow day of the year. . . So this was the weekend.

So I tried zucchini fries in the air fryer last week: FAIL.

But with the leftover zucchini, I found the best zucchini bread recipe: WIN.

Scant 2 cups of AP flour

3/4 tsp baking powder

3/4 tsp baking soda

1 tsp cinnamon

1 tsp salt (scant because I used salted butter)

1 cup light brown sugar

1/2 cup granulated sugar

3/4 cup melted butter (recipe called for vegetable oil - but I didn't have any. . .)

1 tsp vanilla

2 eggs lightly beaten

2 1/2 cups grated zucchini

Optional: 3/4 cup chopped walnuts

~ Mix together first five ingredients in one bowl.

~ Mix together next five ingredients in another bowl.

~ Shred zucchini (I used two medium sized) and do not drain.

~ Add zucchini to dry ingredients first.

~ Then add wet ingredients and walnuts - mix till just combined.

~ Bake at 350 for an hour in a greased loaf pan - or till toothpick comes out clean.

~ I had to cover with foil to keep from browning too much on top.
