Gran's Crunchy Chicken

When the Simmons were displaced by the February ice storm, we had a fire going all week. We walked in the snow, watched Zootopia 2, and made sourdough bread and soups. Gran (Brenna's mother) and Monty became fast friends as they cozied by the fireplace all day and all evening. Brenna commented that despite the circumstances, it was fun to have the gang back together. After so many Fripp trips on the beach in springs gone by, the climate and setting were all different but the same. The night before they all returned to life in the 615, I asked each of them what their birthday dinners would be. BOTH Spencer and Wes said Gran's Crunchy Chicken so I had to have the recipe. She was generous enough to share it and insists that you serve it with cranberry sauce! It lives up to its crunch and kind of reads like a weeknight Christmas dinner.
Thinly sliced chicken breasts or tenders
AP Flour
Can of Cream of Chicken soup
1/4 cup milk
Pepperidge Farm Herb Stuffing (the blue bag)
~ Preheat oven to 375.
~ Salt and pepper chicken.
~ Dredge chicken in flour
~ Mix 1/4 cup of cream of chicken soup with 1/4 cup milk.
~ Then coat floured chicken in cream of chicken mixture.
~ Press chicken into stuffing mix.
~ Drizzle melted butter over chicken on sheet pan.
~ Bake at 375 for 20 minutes. Turning over halfway through.
Serve over remaining cream of chicken soup and with cranberry sauce!
