Fries . . . Zucchini that is.


Of course, there are things you miss when you're going Keto.

There's a reason that comfort foods are COMFORTING.

Sure, I love potatoes - but I don't miss them when just about everything potato can be replaced by cauliflower.

Skipping french fries is manageable but who needs them when there are ZUCCHINI FRIES.

After researching every KETO Zucchini Fries recipe on Pinterest, I came up with these.

Marinara and ricotta make them taste kinda like eggplant parmesan - which I'll probably do next.

1 zucchini cut into large sticks

1 egg

1/2 cup ricotta cheese

1/2 cup almond flour

1/2 cup grated parmesan cheese

SALT!

~ Cut the zucchini into thirds LENGTHWISE, then in thirds WIDTHWISE, then into thirds LENGTHWISE again.

~ Mix egg and ricotta thoroughly. That's your batter. (The ricotta helps the breading stick better!)

~ Mix almond flour and parmesan cheese. That's your breading. (Honestly, better than AP flour for flavor.)

~ Put half zucchini sticks in batter. Leave them for a couple minutes so the zucchini soaks up a bit of the batter.

~ Then drop them into the flour and cheese mixture patting the breading into bare spots.

~ Repeat with the other half of zucchini sticks.

~ EITHER: air fry for 15 minutes, bake at 400 degrees for 25 minutes, or fry in shallow olive oil till browned. (The ones above are air fried.)

~ Sprinkle with salt the minute they are finished.

~ Serve with marinara (no sugar added for KETO) and ricotta cheese.
